The King Beyond the Gate by David Gemmell has a excellent character who is not disabled in anyway but survived having his face ripped off...
Its a wonderful story for such a great character.
Thought i would throw that out there.

The only one I can think of is 'A Walk to Remember' and she's not really disabled in the sense that she's actually sick. That's the closest I could think of but they're are definitely Nicholas Sparks, Jodi Picoult and other authors that have made stories with disabled people being the main characters. You could research it, sorry if this wasn't much help.
